Taste and Texture: Fish from earthen ponds sometimes develop a “muddy” taste (caused by certain algae in the soil), whereas concrete-raised fish usually have a “cleaner” taste but may lack the complexity of flavor found in natural-grown fish.

Disease: Soil can harbor parasites and pathogens that are hard to eliminate. Concrete is much easier to scrub and “reset” between harvests, making it safer for preventing disease outbreaks in intensive farming.
